determined by the type of fish, its habits, its size and the place you're
catching it. Deepwater fishing is very different than shallow water. Size
matters a lot. Spears function in at least three different ways -- stab 'em,
grab 'em and pin 'em down. Harpoons stab into fish (or other creatures) and
have barbs to keep them from pulling out. With a toggle harpoon, the end
comes off and turns sideways inside the animal's body, and is attached to

Fish Drying Racks Drying is one of the simplest ways to preserve fish.
To get the best results it must be done quickly and cleanly. Water occurs
naturally in the fish's body. When a fish is dried, water that is close to
the skin or cut surface is lost first. Water that is deep in the flesh takes
longer to leave. Thick fish must be split in half so that they dry quickly.
Fatty, salty or partly dried fish also take longer to dry. When fish is
drying, air takes up the water. If the air is damp and moving weakly it
cannot carry much water, so drying is slow. Fish dry more quickly in
stronger currents of air. Good quality products can be produced when there
is plenty of sunlight and dry, moving air.

organisms, including fish, can have parasites. Parasites are a natural
occurrence, not contamination. They are as common in fish as insects are in
fruits and vegetables. Parasites do not present a health concern in
thoroughly cooked fish.
Natural Marine Toxins Paralytic
shellfish poisoning (PSP) toxins and domoic acid are naturally occurring
marine toxins. Single-celled marine plants (phytoplankton) produce these
toxins. Marine animals that filter their food from seawater may accumulate
these toxins. The toxins do not appear to directly harm the animals, but
people or some predatory animals eating toxic seafoods may become poisoned.
PSP toxins and domoic acid are powerful nerve poisons. PSP toxins and domoic
acid have no taste or odor. There is no visible difference between toxic and
safe seafoods. Cleaning seafoods in many cases will not remove the toxins.
Cooking does not destroy the toxins.
Seafood that Glows in the Dark Seafood
that produces a bright, blue-green light in the dark could be a meal from
outer space or haute cuisine in a science fiction novel. The U. S. Food and
Drug Administration (FDA) has received many consumer complaints about
various seafood products "glowing" in the dark. Some of these consumers
called their local health departments, poison control centers, and their
U.S. Senator because they thought they had been poisoned by radiation. These
consumers said they had trouble convincing people that their seafood was
emitting light.

Encyclopedia (RFE) is a compilation of data in several formats that assists
with the accurate identification of fish species. The RFE includes for each
of a number of commercially relevant fish species for sale in the U.S.
market high-resolution photographs as their scanned digital images (jpeg
format) of whole fish and their marketed product forms (including fillets,
steaks, or whole crustaceans) which may be used for visual comparison to a
whole fish in question (or its marketed product form). The RFE also includes
unique taxonomic characteristics (physical properties such as size, shape,
color, etc.), usually in a "checklist" format, to aid in identification. And
